Leather uppers breathe and mould, which matters more over a long day than any amount of padding does.
The footbed is moulded rather than mouldable — support comes from a fixed shape, so there is no break-in period and no personalisation either. The rocker profile removes several thousand flex cycles from your foot over a long day. You notice it at the end of the shift rather than during it.
The open heel vents heat and comes off without bending down. It also means the shoe is held by your instep, not your heel — if you are curling your toes to keep it on, it is too big. Slips on and off at security and packs flatter than a boot, which is most of why people travel in clogs.
If a specific spot hurts on day one, that is a fit problem and will not break in. General stiffness will.
